Super easy to make: Gluten Free? No prob.
I followed this recipe from Yellow Bliss Road. I made a few tiny tweaks
INGREDIENTS
225 g (8 oz) cream cheese , softened
1/3 cup powdered sugar or more to taste
1 tablespoon vanilla extract
lemon juice (optional)
12 slices of (gluten free*) brioche**
2 eggs
3/4 cup milk
1.5 teaspoon granulated sugar
ground cinnamon
sliced strawberries (optional)
* To make it gluten free, I recommend using gluten free brioche. I used this one sold in Woolworths.
** Honestly, any bread will do but thicker, richer breads like brioche are nicer
INSTRUCTIONS
Beat together cream cheese, powdered sugar, vanilla until a you have a spreadable consistency. You can add a tiny squeeze of lemon juice to balance the sweetness if you want.
Line up 6 slices of bread and spread a thick layer of cream cheese filling on each one. Add strawberry slices if desired then top with remaining 6 slices of bread. Now we have cream cheese (and strawberry) filled sandwiches.
In a small bowl whisk eggs, milk, and granulated sugar together.
Melt butter in a frying pan (or skillet or griddle if you have one) over medium heat. Dip the sandwiches in the egg mixture to coat completely, place in the frying pan and sprinkle cinnamon on side facing up.
Cook sandwiches until golden brown on both sides. Make sure you sprinkle cinnamon on the second side after you flip the french toast.
Top with strawberries, syrup, whipped cream, icing sugar, whatever your little heart desires
