Next attempt will be to make it Gluten Free. (The lemon custard as is IS gluten free, however the tart crust is not)
I followed these recipes EXACTLY from Pretty Simple Sweet. The tart crust is here and the lemon custard / tart assembly is here. Since I did not change the recipes at all, please follow the links for the recipes.
NOTE: Don't let not having pie weights deter you. I used flour (bc it's cheap and I have a heap of it). You can also use: sugar, beans, another (smaller) pie tin, random metal objects like spoons and forks (apparently). Anything that won't burn in the oven but will still weigh your dough down enough so it doesn't puff.
I have NEVER made custard before and I think I've only made something resembling tart dough MAYBE once before. This honestly came out great and was super easy to make. Highest praises from the people I made it for (and they are INCREDIBLY picky) so I would absolutely recommend this tart :)
